Corn Chowder Slow Cooker

This delicious slow cooker Corn Chowder was a keeper for us the first time we made it. Simple ingredients and super easy to make especially on a week day. It also makes great leftovers for lunch time the next day and the flavor only gets better! Hope you love this slow cooker recipe!

Equipment

  • 1 slow cooker
  • 1 skillet

Ingredients
  

  • 32 oz. Vegetable Broth or Chicken Broth
  • 2 15oz. cans Fire-roasted corn drained
  • 4-5 Potatoes any type, cubed
  • 1 Medium Onion chopped
  • 2 Shallots chopped
  • 1 Red Pepper diced
  • 1 Pound Bacon save some for topping
  • 1 Teaspoon Salt
  • Pepper to taste
  • 1/2 Teaspoon Paprika
  • 1 Cup Cream

Instructions
 

  • Using a skillet make bacon, drain it and crumble when cool.
  • Chop red pepper, red onion, red potatoes and add to slow cooker. Add broth, corn, salt, black pepper, paprika and bacon crumbles and stir together.
  • Slow cook for 4 hours on high or 7 hours on low.
  • When its ready, add in the cream and stir in, cook for an additional 30 minutes.
  • Top with bacon crumbles and sliced green onion. Serve
