Ingredients
- 8 6-inch wooden skewers
- 2 pounds boneless chicken, cut into bit size pieces
- 2 tablespoons olive oil
- 1 tablespoon Italian seasoning
- 2 ½ teaspoons salt divided
- 2 teaspoons garlic powder divided
- 4 tablespoons unsalted butter melted
- ¼ cup finely grated Parmesan
- 2 tablespoons finely chopped fresh parsley plus more for serving
- Lemon wedges for serving (optional)
Instructions
- Trim the wooden skewers so they fit into your air fryer basket, if needed. Soak them in water for at least 30 minutes to prevent burning during cooking.
- In a large bowl, toss the chicken pieces with olive oil, Italian seasoning, 2 teaspoons of kosher salt, and 1 teaspoon of garlic powder until evenly coated.
- Thread the chicken pieces onto the soaked skewers, using about 6 pieces per skewer.
- Working in batches if necessary, arrange the skewers in the air fryer basket in a single layer, spacing them about ½ inch apart. Air fry at 400°F (204°C) for 8 minutes.
- While the chicken cooks, in a small bowl, mix the melted butter, finely grated Parmesan, chopped parsley, the remaining 1 teaspoon garlic powder, and the remaining ½ teaspoon kosher salt until combined.
- After 8 minutes, flip the skewers. Generously brush the chicken with the garlic-herb butter mixture.
- Continue air frying at 400°F (204°C) until the chicken is browned, cooked through, and an instant-read thermometer inserted into the thickest part registers 165°F (74°C), about 4 minutes more.
- Transfer the skewers to a platter. Garnish with additional chopped parsley and serve with lemon wedges on the side, if desired.
