
Bruschetta
A delicious and easy appetizer. The balsamic glaze gives it a little bite. Dried basil can also be used in place of fresh, if needed.
Ingredients
- 5 Roma / Plum tomatoes, diced
- 1/2 yellow onion, chopped
- bunch fresh basil leaves, stems removed and chopped
- 4 garlic cloves, minced
- 6 TBS olive oil
- salt to taste
- 1 1/2 tsp balsamic glaze
- ½ cup mozzarella cheese, shredded
Instructions
- In a large bowl mix together the tomatoes, onion, three garlic cloves, basil, salt, three TBS of olive oil and balsamic glaze.
- Cut the baguette into 3/4 inch slices. On a baking sheet arrange the baguettes slices in a single layer.
- Mince the remaining three garlic cloves and combine with three tablespoons of olive oil. Mix together and coat the baguette slices, topping the slices with mozzarella cheese.
- Bake at 350℉ or 176℃ for 3-5 minutes. Just until they are toasted lightly and the cheese has melted.
- Top each baguette slice with the tomato mixture and a little extra mozzarella cheese. Optional to add a drizzle of balsamic glaze over each one.
