Bruschetta

A delicious and easy appetizer. The balsamic glaze gives it a little bite. Dried basil can also be used in place of fresh, if needed.

Ingredients
  

  • 5 Roma / Plum tomatoes, diced
  • 1/2 yellow onion, chopped
  • bunch fresh basil leaves, stems removed and chopped
  • 4 garlic cloves, minced
  • 6 TBS olive oil
  • salt to taste
  • 1 1/2 tsp balsamic glaze
  • ½ cup mozzarella cheese, shredded

Instructions
 

  • In a large bowl mix together the tomatoes, onion, three garlic cloves, basil, salt, three TBS of olive oil and balsamic glaze.
  • Cut the baguette into 3/4 inch slices. On a baking sheet arrange the baguettes slices in a single layer.
  • Mince the remaining three garlic cloves and combine with three tablespoons of olive oil. Mix together and coat the baguette slices, topping the slices with mozzarella cheese.
  • Bake at 350℉ or 176℃ for 3-5 minutes. Just until they are toasted lightly and the cheese has melted.
  • Top each baguette slice with the tomato mixture and a little extra mozzarella cheese. Optional to add a drizzle of balsamic glaze over each one.

Notes

Some of the ingredients can be to your taste.  Feel free to add more or less garlic, basil, etc…
