
Cajun Chicken Pasta
We were thrilled when we found this recipe and just did not disappoint! Filled with tons of flavor and its one of those pasta dishes you just have to have more of! I'm thinking you'll love this one, enjoy!
Equipment
- 1 large skillet, deep
- 1 small bowl
Ingredients
Make Cajun Seasoning
- 2 tsp smoked paprika
- 1 tsp oregano dried
- 1 tsp thyme dried
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp cayenne pepper
- salt and pepper to taste
Make Chicken Pasta
- 1 TBS olive oil
- 1 TBS butter
- 1 pound boneless, skinless chicken breasts
- 1 medium yellow onion
- half a box of penne pasta (uncooked)
- 1 15oz can fire roasted tomatoes
- 1 15.5oz can great northern beans
- 2 cups chicken broth
- 8 oz cream cheese
- green onions for topping
Instructions
- Mix the ingredients for the Cajun seasoning in a small bowl and set aside.
- Cut the chicken into 3/4-inch cubes. Place the chicken in a bowl, pour the Cajun seasoning over top, and mix to coat the chicken in the Cajun spices.
- Add the olive oil and butter to a large deep skillet. Heat the oil and butter over medium-high until the skillet is hot and the butter is melted. Add the seasoned chicken to the skillet and cook for a couple minutes or just until the outside gets some color. The chicken does not need to be cooked through at this point.
- Add the diced yellow onion to the skillet and continue to sauté for about 3 minutes more, or just until the onion begins to soften.
- Add the pasta (uncooked), fire roasted diced tomatoes (do not drain), great northern beans (drained) and chicken broth to the skillet. Stir until everything is combined, then place a lid on top and allow the broth to come up to a boil.
- Once boiling, turn the heat down to medium-low and let the pasta simmer for about ten minutes, stirring every couple of minutes, until the pasta is tender and the liquid is thick and saucy.
- Add the cream cheese to the skillet broken up a bit, then stir until it has melted into the sauce. Top the pasta with sliced green onions and serve.

Notes
- You can make the chicken breasts yourself or buy a whole roasted chicken at the store and use that.
- Next time, I”ll add an additional can of fire roasted tomatoes it just seem to make the dish even more hearty.
- Do not use more pasta than what it calls for otherwise any extra pasta will soak up all the sauce.
- The pasta type could also be changed to a different type.
