
Capellini Pomodoro
Capellini Pomodoro is one of those easy and fast recipes I had tucked away far back in my recipe book. Years ago working at the Olive Garden, this is the one pasta dish I had to make at home so I could always have it. It's with the basil and tomatoes and filling up with the pasta, so flavorful. You could add grilled chicken to this easily and it just makes it a little more amazing. Get ready for an Italian dinner!
Equipment
- 1 sauce pan
- 1 pot for cooking pasta
Ingredients
- 1/2 pound angel hair
- 8-10 roma tomatoes diced
- handful of fresh basil chopped
- 6-8 garlic cloves rough chop
- 1/2 cup / 65g olive oil
- 2 tsp salt
- pinch red pepper flakes
- black pepper to taste
- Parmesan cheese grated for topping
Instructions
- Cook angel hair pasta with a pinch of salt and drain, set aside.
- Rough chop garlic cloves and add them to a sauce pan with olive oil over medium heat adding, pinch cayenne pepper (optional) salt and black pepper.
- Cut and chop roma tomatoes and fresh basil leaves, add to the sauce pan on medium and simmer for five minutes.
- Add angel hair pasta to the skillet and mix together.
- Serve and grate Parmesan cheese over the top and some extra basil leaves.

You could easily add extra garlic and tomatoes to this dish.
Also grilled chicken on top would add a great addition with lots of protein.
