
Chewy Chocolate Cookies

Ingredients
- 1 cup unsalted butter / 227g softened
- 2 cups sugar / 400g
- 2 eggs room temperature
- 2 tsp vanilla
- 2 cups all-purpose flour / 240g
- ¾ cup unsweetened cocoa / 64g
- 1 tsp baking soda
- ½ tsp salt
Instructions
- Preheat oven to 350℉ / 176℃
- Add the softened butter to a bowl and cream. Add in the sugar and blend with the butter.
- Add the eggs and vanilla and mix.
- Add the flour, cocoa, baking soda, and salt and blend.
- Spoon onto a baking sheet. Bake for 10 minutes. Let cool on the baking sheet for about 3 minutes. Set on a cooling rack
Notes
- Don’t over bake them or they will get too crunchy.
- Try using an ice cream scoop instead of a spoon for a rounder cookie.
- Turn them into a cookie whoopie pie by just making a buttercream icing and adding it between two cookies.
