Ingredients
  

  • 1 cup unsalted butter / 227g softened
  • 2 cups sugar / 400g
  • 2 eggs room temperature
  • 2 tsp vanilla
  • 2 cups all-purpose flour / 240g
  • ¾ cup unsweetened cocoa / 64g
  • 1 tsp baking soda
  • ½ tsp salt

Instructions
 

  • Preheat oven to 350℉ / 176℃
  • Add the softened butter to a bowl and cream. Add in the sugar and blend with the butter.
  • Add the eggs and vanilla and mix.
  • Add the flour, cocoa, baking soda, and salt and blend.
  • Spoon onto a baking sheet. Bake for 10 minutes. Let cool on the baking sheet for about 3 minutes. Set on a cooling rack

Notes

  • Don’t over bake them or they will get too crunchy.
  • Try using an ice cream scoop instead of a spoon for a rounder cookie.
  • Turn them into a cookie whoopie pie by just making a buttercream icing and adding it between two cookies.
