Chocolate Chip Biscotti

Equipment

  • 1 electric mixer
  • 1 wire rack
  • 1 serrated knife

Ingredients
  

  • 2 cups / 240g all-purpose flour
  • 3/4 cup / 150g sugar
  • 1/4 cup / 25g almond flour
  • 1 ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 3 large eggs room temperature / one is for the egg wash
  • 4 tablespoons / 57g salted butter melted
  • 1 teaspoons vanilla
  • 2 cup / 350g semi-sweet morsels divided

Instructions
 

  • Preheat oven to 350℉ and line a baking sheet with parchment paper.
  • Using a paddle attachment on your mixer, blend together sugar, flour, almond flour, salt and baking powder.
  • Add 2 eggs, melted butter and vanilla and beat on low until a dough starts to form and it will be a little crumbly. Add 1/2 cup / 88g semi-sweet chocolate chips and mix again.
  • Move dough to a slightly floured surface and knead a few times making a cohesive dough and the divide it into two halves. Shape each half into a 1" thick (5 x 3 inch) rectangle and place unto a prepared pan about 4" apart. Brush the top of the dough with beaten egg wash.
  • Bake until dough is cracked and outside is lightly brown, about 30 minutes. Take the loaves out of the oven and let them cool on a wire rack for about 20 minutes. Reduce the oven temperature to 325℉.
  • Using a serrated knife, cut each loaf into 1 inch wide slices and put back on the backing sheet cut-side down. Bake an additional 20 minutes until lightly browned.
  • Transfer them back to the wire rack to completely cool. After they are cooled use 1 1/2 cups / 263g semi-sweet chocolate morsels and melt in a microwave at 30 second intervals until melted. Dip each biscotti in the melted chocolate and allow to dry on a wire rack.

Notes

You could substitute the semi-sweet morsels for other types like white chocolate or even butterscotch.  There are many ways to bake the right biscotti just the way you want it.  Be sure to have plenty of coffee ready!
