
Peanut Butter Whoopie Pies

Ingredients
For the Cookies
- 1 ½ cup all-purpose flour
- 1/2 cup butter unsalted room temperature
- 1 cup peanut butter
- ½ cup brown sugar lightly packed
- ½ cup sugar
- 1 tsp vanilla extract
- 1 egg room temperature
- ¾ tsp baking powder
For the Peanut Butter Buttercream Frosting
- 1 cup creamy peanut butter
- 4 cups confectionery sugar
- 1 cup butter room temperature
- ¼ cup milk
- ½ tsp vanilla
Instructions
For the Cookies
- Preheat over to 350F
- Sift flour and baking powder together then whisk to combine, set aside.
- Cream butter and sugars in a stand mixer. You can add an optional 1/4-1/2 tsp salt.
- Add peanut butter and mix until incorporated.
- Mix in egg and vanilla then add flour mixture and beat well.
- Roll dough into one inch balls and place on baking sheet lined with parchment paper. Flatten cookies with a fork in a criss-cross pattern.
- Bake cookies for about 10 minutes.
- Allow cookies to cool completely on baking sheet, before adding the frosting.
For the Peanut Butter Buttercream Frosting
- Cream together in a stand mixer peanut butter and butter, mix until creamy.
- Add in confectionery sugar, milk and vanilla and mix until well blended.
- Add in between the cookies using a piping bag with a tip or by simply using a spoon. Enjoy!
