Candied Apple Pie Cheesecake

ANY GOOD CHEESECAKE IS WORTH THE EXTRA EFFORT IT TAKES TO MAKE EVERYONE SMILE. CHEESECAKES ARE THE DESSERTS THAT WE MAKE MOST OFTEN AND THIS IS ONE OF OUR FAVORITES.

- 2 cups ginger snaps crushed
- 6 TBS butter melted
- 2 8oz packages cream cheese softened
- 1/2 cup sugar
- 1/2 cup sour cream
- 2 tsp vanilla
- 2 eggs room temperature
- 1/2 cup apple pie filling
- 1/2 cup walnuts or pecans
- 1/2 cup toffee bits
Heat oven to 325°F.
Mix crumbs, butter and 2 Tbsp. sugar; press onto bottom and up side of 9-inch pie plate.
Beat cream cheese, 1/2 cup sugar and vanilla with mixer until blended. Add sour cream; mix well. Add eggs, one at a time, beating just until blended after each. Stir in 1/2 each pie filling, nuts and toffee. Pour into crust.
Bake 35 min. or until center is almost set. Cool. Refrigerate 4 hours. Top with remaining apple pie filling, nuts and toffee before serving
