- 1 pound Chicken Breasts cooked and shredded
- 4 cups Chicken Broth
- 2 teaspoons Olive Oil
- 1/2 cup Onion chopped
- 1 cup Carrots diced
- 1/2 cup Celery diced
- 2 Garlic Cloves minced
- 1 Package 8oz Cream Cheese
- 1/2 cup Heavy Cream
- Salt and Black Pepper to taste
- 2 cups uncooked Ditalini Pasta
- 2 cups frozen Spinach thawed and drained
- Top with Cheddar Cheese
To a large deep skillet add olive oil and over medium heat add onion, celery, garlic, carrots and chicken broth, bring to a simmer for five minutes to soften vegetables.
Add cream, cream cheese and chicken and continue to simmer. Add in the spinach and ditalini pasta blend together and continue to simmer until the pasta is done.
Serve right away, top with cheddar cheese (optional) and you can freeze any left overs for easy meals.
