Taco Twist Soup

A super easy soup and ready in no time! This recipe does not have any ground beef or meats but you could certainly add some just be sure to increase your broth by a little bit. Enjoy!

Ingredients
  

  • 2 TBS olive oil
  • 1 medium yellow onion chopped
  • 2 garlic cloves minced
  • 3 cups vegetable broth optional: reduced sodium beef broth
  • 1 15oz can black beans rinsed and drained
  • 1 14.5oz can diced tomatoes undrained
  • cups picante sauce
  • 1 cup uncooked spiral pasta
  • 1 green bell pepper chopped
  • 2 tsp chili powder
  • 1 tsp cumin
  • shredded cheddar, sour cream, cilantro, jalapenos optional toppings

Instructions
 

  • In a stock pot, heat oil over medium-high heat. Add oil and garlic and onion and cook and stir until crisp-tender, 3-4 minutes.
  • Stir in, green peppers, picante sauce, tomatoes, beans, broth, pasta, cumin and chili powder.
  • Bring to a boil, stirring frequently. Reduce heat and simmer until pasta is tender about 10-12 minutes.
  • Serve and add additional toppings such as shredded cheddar, sour cream, jalapenos or cilantro.
