
Creamy Chicken Soup

Equipment
- 1 large deep skillet
Ingredients
- 1 pound Chicken Breasts cooked and shredded
- 4 cups Chicken Broth
- 2 teaspoons Olive Oil
- 1/2 cup Onion chopped
- 1 cup Carrots diced
- 1/2 cup Celery diced
- 2 Garlic Cloves minced
- 1 Package 8oz Cream Cheese
- 1/2 cup Heavy Cream
- Salt and Black Pepper to taste
- 2 cups uncooked Ditalini Pasta
- 2 cups frozen Spinach thawed and drained
- Top with Cheddar Cheese
Instructions
- To a large deep skillet add olive oil and over medium heat add onion, celery, garlic, carrots and chicken broth, bring to a simmer for five minutes to soften vegetables.
- Add cream, cream cheese and chicken and continue to simmer. Add in the spinach and ditalini pasta blend together and continue to simmer until the pasta is done.
- Serve right away, top with cheddar cheese (optional) and you can freeze any left overs for easy meals.
