Creamy Chicken Soup

Equipment

  • 1 large deep skillet

Ingredients
  

  • 1 pound Chicken Breasts cooked and shredded
  • 4 cups Chicken Broth
  • 2 teaspoons Olive Oil
  • 1/2 cup Onion chopped
  • 1 cup Carrots diced
  • 1/2 cup Celery diced
  • 2 Garlic Cloves minced
  • 1 Package 8oz Cream Cheese
  • 1/2 cup Heavy Cream
  • Salt and Black Pepper to taste
  • 2 cups uncooked Ditalini Pasta
  • 2 cups frozen Spinach thawed and drained
  • Top with Cheddar Cheese

Instructions
 

  • To a large deep skillet add olive oil and over medium heat add onion, celery, garlic, carrots and chicken broth, bring to a simmer for five minutes to soften vegetables.
  • Add cream, cream cheese and chicken and continue to simmer. Add in the spinach and ditalini pasta blend together and continue to simmer until the pasta is done.
  • Serve right away, top with cheddar cheese (optional) and you can freeze any left overs for easy meals.
