
Potato and Cheddar Soup
Get ready for dinner and this one will make everyone happy! Easy to make and there might even be some left over plus this freezes well if you would like to save it for later. Hope you enjoy!
Equipment
- 1 large stock pot
Ingredients
- 7 Pieces Bacon crumbled for topping
- 3-4 Large Potatoes cubed
- 1 Medium Onion chopped
- 2-3 Carrots chopped
- 1 Garlic Clove minced
- 1/4 Cup All-Purpose Flour
- 6 Cups Chicken Broth
- 1/2 Cup Heavy Cream
- 2 Tablespoons Butter
- Pinch Salt
- 2 Cups Shredded Cheddar
- Fresh Chives for topping
Instructions
- Cook 7 strips of bacon, crumble and set aside. Leave the drippings in the pot.
- Chop potatoes, carrots, onion and garlic and allow to simmer on low until tender.
- Add in flour and broth cover and simmer. Remove lid and add potatoes, heavy cream and cheese continue to simmer on low until the cheese is melted.
- Remove from heat and use a few fresh chives for topping prior to serving.
