Potato and Cheddar Soup

Equipment

  • 1 large stock pot

Ingredients
  

  • 7 Pieces Bacon crumbled for topping
  • 3-4 Large Potatoes cubed
  • 1 Medium Onion chopped
  • 2-3 Carrots chopped
  • 1 Garlic Clove minced
  • 1/4 Cup All-Purpose Flour
  • 6 Cups Chicken Broth
  • 1/2 Cup Heavy Cream
  • 2 Tablespoons Butter
  • Pinch Salt
  • 2 Cups Shredded Cheddar
  • Fresh Chives for topping

Instructions
 

  • Cook 7 strips of bacon, crumble and set aside. Leave the drippings in the pot.
  • Chop potatoes, carrots, onion and garlic and allow to simmer on low until tender.
  • Add in flour and broth cover and simmer. Remove lid and add potatoes, heavy cream and cheese continue to simmer on low until the cheese is melted.
  • Remove from heat and use a few fresh chives for topping prior to serving.
