
Turkey and Wild Rice Soup
What a great year round savory soup that you can use turkey or chicken when your making it. Lots of vegetables and the rice makes it even more cozy thick soup. When I think you'll enjoy for years to come.
Equipment
- 1 large stock pot
- 1 sauce pan
Ingredients
- 1 Cup Wild Rice uncooked
- 2 1/4 Cup Water
- 4 Tablespoons Butter
- 3-4 Red Potatoes chopped
- 1 Celery Rib chopped
- 1 Medium Carrot chopped
- 1 Medium Yellow Onion chopped
- 2 Garlic Cloves minced
- 1/2 cup All-Purpose Flour
- Pinch Salt to taste
- Pinch Black Pepper to taste
- 3 Cup Chicken Broth not filmed in the video
- 2 Cups Half and Half
- Sprigs of fresh Rosemary
- 2 Cups Turkey or Chicken cooked
Instructions
- Make wild rice according the box directions and set aside.
- Chop all vegetables: potato, carrots, celery and onion.
- Using a large stock pot over medium heat add butter to the bottom and add the vegetables cover and simmer till they are soft.
- Remove lid, add garlic, flour and cooked wild rice, broth and salt and pepper, stir. Add in half and half, rosemary, cooked turkey and continue to simmer for 10-15 minutes before serving.
