Turkey and Wild Rice Soup

What a great year round savory soup that you can use turkey or chicken when your making it. Lots of vegetables and the rice makes it even more cozy thick soup. When I think you'll enjoy for years to come.

Equipment

  • 1 large stock pot
  • 1 sauce pan

Ingredients
  

  • 1 Cup Wild Rice uncooked
  • 2 1/4 Cup Water
  • 4 Tablespoons Butter
  • 3-4 Red Potatoes chopped
  • 1 Celery Rib chopped
  • 1 Medium Carrot chopped
  • 1 Medium Yellow Onion chopped
  • 2 Garlic Cloves minced
  • 1/2 cup All-Purpose Flour
  • Pinch Salt to taste
  • Pinch Black Pepper to taste
  • 3 Cup Chicken Broth not filmed in the video
  • 2 Cups Half and Half
  • Sprigs of fresh Rosemary
  • 2 Cups Turkey or Chicken cooked

Instructions
 

  • Make wild rice according the box directions and set aside.
  • Chop all vegetables: potato, carrots, celery and onion.
  • Using a large stock pot over medium heat add butter to the bottom and add the vegetables cover and simmer till they are soft.
  • Remove lid, add garlic, flour and cooked wild rice, broth and salt and pepper, stir. Add in half and half, rosemary, cooked turkey and continue to simmer for 10-15 minutes before serving.
